Vegetables 101/Knife Skills (Lafayette)
A healthy diet begins by eating more fruits and vegetables--something that’s a lot easier with good knife skills. Get off to a good start with these classes, where we focus on a couple seasonal vegetables, learning how to buy the right ones, store for freshness, and cut, peel, stem, seed and cook to maximize flavor. At the same time, we brush up on knife skills, learning all about dicing, slicing, mincing and more. A perfect beginning to the good eating journey. (Based on Every Day Healthy Cooking Class format)
Dates Saturdays, February 23 and March 16--come to one or all; different vegetables/dishes in each class
Time 2:00 - 4:30 pm (last 30 minutes for review and clean-up)

We'll make and taste a variety of vegetable-rich dishes--both with and without meat--and learn the secrets for wonderful-tasting vegetables. You'll soon be eating them abundantly and with relish.
Class covers the basics of buying, storing and prepping winter greens and vegetables + the fun part of seasoning, cooking for best flavor and weaving into soups, grains, skillets and more. As we cook together in this hands-on class, discover the fun, creative side of cooking, time- and money-saving tricks, and how wholesome everyday meal making can be manageable for everyone.
